Ingredients
4 lbs pork loin
6 cloves garlic, minced
1/4 cup olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
1/2 cup chicken broth
2 tbsp lemon juice
1 tbsp Dijon mustard
1 large onion, sliced
Instructions
1. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.
2. Rub the mixture all over the pork loin.
3. Place the sliced onion at the bottom of the slow cooker.
4. Lay the pork loin on top of the onions.
5. In another bowl, mix chicken broth, lemon juice, and Dijon mustard; pour over pork loin.
6. Cover and cook on low for 6-8 hours or until the pork is tender.
7. Once cooked, remove pork loin and let rest for 15 minutes before slicing.
Storage
Store leftover pork in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place slices in a baking dish, cover with foil, and warm in a 300°F preheated oven for 15-20 minutes.
