Ingredients

3 lbs yellow onions (sliced)
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
2 cloves garlic (minced)
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary (chopped)
1/2 cup dry white wine
6 cups beef broth
1 bay leaf
1/4 cup grated Parmesan cheese
1 baguette (sliced and toasted for serving)
1 cup Gruyere cheese (shredded for topping)

Instructions

1. In a large skillet, melt butter with olive oil over medium heat. Add sliced onions and cook until caramelized, about 25 minutes.
2. Add salt, pepper, and garlic to the onions, and cook for an additional 2 minutes.
3. Stir in thyme, rosemary, and white wine. Simmer until wine is reduced by half.
4. Transfer onion mixture to the slow cooker. Add beef broth and bay leaf. Stir to combine.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
6. Before serving, stir in Parmesan cheese until melted.
7. Ladle soup into bowls, top with toasted baguette slices and shredded Gruyere cheese.
8. Place bowls under a broiler for 2-3 minutes, or until cheese is bubbly and golden.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
