Savory Slow Cooker Lemon Herb Chicken

Ingredients
4 lbs whole chicken
2 lemons, sliced
1/4 cup olive oil
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp garlic powder
1 tsp salt
1 tsp black pepper
1/2 cup chicken broth
2 onions, quartered
4 carrots, chopped
4 celery stalks, chopped
Instructions
1. Rinse and pat dry the whole chicken. Rub olive oil over the chicken and season it with salt, pepper, oregano, thyme, and garlic powder.
2. Place half the lemon slices inside the cavity of the chicken. Arrange onions, carrots, and celery at the bottom of the slow cooker. Pour chicken broth over the vegetables.
3. Place the seasoned chicken on top of the vegetables and arrange the remaining lemon slices around it.
4. Cover and cook on low for 6 to 8 hours or until the chicken is tender and fully cooked. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
5. Remove the chicken and vegetables from the slow cooker. Let the chicken rest for a few minutes before carving. Serve with the cooked vegetables.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F covered with foil for 15-20 minutes or until heated through.
