Savory Slow Cooker Herb Pot Roast

Ingredients

3 lbs beef chuck roast
2 tbsp olive oil
1 cup beef broth
4 cloves garlic, minced
1 onion, chopped
3 large carrots, sliced
4 russet potatoes, quartered
2 tbsp Worcestershire sauce
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 bay leaf
Salt and pepper to taste

Instructions

1. Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides.
2. Transfer the roast to the slow cooker and add beef broth, garlic, onion, carrots, and potatoes.
3. Stir in Worcestershire sauce, rosemary, thyme, and add the bay leaf.
4. Season with salt and pepper to taste.
5. Cover and cook on low for 8-10 hours or until the meat is tender.
6. Remove bay leaf before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave or on the stove over medium heat until warmed through.
