Ingredients
4 lbs whole chicken
2 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp dried thyme
1 tsp rosemary
1 tsp garlic powder
1 tsp onion powder
1 lemon, sliced
1 cup chicken broth
2 tbsp olive oil
1 large onion, quartered
4 cloves garlic, minced
Instructions
1. Rinse the chicken and pat dry with paper towels.
2. In a small bowl, mix together salt, pepper, paprika, thyme, rosemary, garlic powder, and onion powder.
3. Rub the spice mixture all over the chicken, including under the skin.
4. Heat olive oil in a skillet over medium heat. Sear the chicken on all sides until golden brown.
5. Place the onion and garlic at the bottom of the slow cooker.
6. Place the chicken on top of the onions and garlic.
7. Pour chicken broth into the bottom of the slow cooker.
8. Add lemon slices on top of the chicken.
9. Cover and cook on low for 6-7 hours or until the chicken is tender and fully cooked.
10. Let the chicken rest for 10 minutes before carving and serving.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the chicken in a microwave-safe dish or in the oven at 350°F (175°C) until heated through.
