Savory Slow Cooker Apple Cider Pork Loin

Ingredients
4 lbs pork loin
2 cups apple cider
1/2 cup apple cider vinegar
1/4 cup brown sugar
1 tbsp Dijon mustard
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 large onion, sliced
3 cloves garlic, minced
2 apples, cored and sliced
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Sear the pork loin on all sides until golden brown. Transfer the pork to the slow cooker.
2. In the same skillet, add sliced onions and garlic, sauté until onions are translucent. Add apple cider vinegar, brown sugar, and Dijon mustard, stirring well to combine.
3. Pour the apple cider mixture over the pork loin in the slow cooker. Add sliced apples around the pork.
4. Set the slow cooker on low and cook for 6-8 hours or until the pork is tender and cooked through.
5. Before serving, remove the pork loin from the slow cooker and let it rest for 10 minutes. Slice and serve with the cooked apples and onions.
Storage
Store leftover pork loin in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place slices of pork loin in a pan with a splash of apple cider and warm over low heat until heated through.
