Ingredients
1 lb kale, stems removed and leaves chopped
2 tbsp olive oil
3 cloves garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1 tbsp lemon juice
1/4 cup water
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and sauté for 1 minute until fragrant.
3. Add chopped kale to the skillet, stirring to coat with oil and garlic.
4. Season with salt and black pepper.
5. Pour in water and cover the skillet, allowing the kale to steam for 5-7 minutes until tender.
6. Remove the cover and increase heat to high. Stir frequently until the liquid evaporates.
7. Drizzle lemon juice over the kale and give it a final stir before serving.
Storage
Store leftover sautéed kale in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, warm in a skillet over medium heat until heated through, or microwave for 1-2 minutes.
