Savory Sausage and Spinach Breakfast Casserole

Ingredients
1 lb ground pork sausage
2 cups fresh spinach, chopped
1 cup sharp cheddar cheese, shredded
1 cup mozzarella cheese, shredded
6 large eggs
1 cup whole milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp nutmeg
2 tbsp butter
1/4 cup green onions, chopped
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, brown the sausage over medium heat until fully cooked, about 8 minutes. Drain excess fat.
3. Add butter to the sausage in the skillet, then stir in the chopped spinach and cook until wilted, about 2 minutes.
4. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and nutmeg until well combined.
5. Grease a 9x13 inch baking dish and spread the sausage and spinach mixture evenly across the bottom.
6. Sprinkle shredded cheddar and mozzarella cheeses over the sausage mixture.
7. Pour the egg mixture over the cheese and sausage layers evenly.
8. Top with chopped green onions.
9. Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.
10. Allow to cool slightly before slicing and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave for 1-2 minutes or until heated through.
