Savory Roasted Chicken

Ingredients
1 whole chicken (about 4 lbs)
2 tbsp olive oil
1 tbsp kosher salt
1 tsp black pepper
1 lemon, halved
4 cloves garlic, smashed
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary leaves
1 onion, quartered
2 carrots, chopped
2 celery stalks, chopped
Instructions
1. Preheat oven to 425°F (220°C).
2. Pat the chicken dry with paper towels and place in a roasting pan.
3. Rub the chicken with olive oil, salt, and pepper.
4. Stuff the cavity with lemon halves, garlic, thyme, and rosemary.
5. Surround the chicken with onion, carrots, and celery.
6. Roast the chicken in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
7. Let the chicken rest for 10 minutes before carving and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 20 minutes or until heated through.
