Savory Roast Chicken

Ingredients

1 whole chicken (4-5 lbs)
2 tbsp olive oil
1 tbsp salt
1 tsp black pepper
1 lemon, halved
4 cloves garlic, crushed
4 sprigs fresh rosemary
1 onion, quartered
2 carrots, peeled and cut into chunks
2 celery stalks, cut into chunks

Instructions

1. Preheat the oven to 375°F.
2. Pat the chicken dry with paper towels and place it in a roasting pan.
3. Rub the chicken with olive oil, salt, and pepper.
4. Squeeze lemon juice inside and over the chicken, then place lemon halves inside the cavity.
5. Add crushed garlic and rosemary inside the cavity.
6. Arrange onion, carrots, and celery around the chicken.
7. Roast in the oven for 90 minutes or until the internal temperature reaches 165°F.
8. Let the chicken rest for 10 minutes before carving.

Storage

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 15-20 minutes until heated through.
