Ingredients
2 lbs russet potatoes, peeled and diced
1 lb bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1/2 cup chopped green onions
10 large eggs
1 cup whole milk
1 tsp salt
1/2 tsp black pepper
1/4 tsp smoked paprika
2 tbsp unsalted butter, softened for greasing
1/4 cup fresh parsley, chopped for garnish
Instructions
1. Preheat the oven to 375°F and grease a 9x13 inch baking dish with butter.
2. In a large skillet over medium heat, cook the bacon until crispy. Remove bacon and crumble, setting aside.
3. In the same skillet, add diced potatoes and cook until lightly browned, about 10 minutes. Transfer to the prepared baking dish.
4. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and smoked paprika.
5. Evenly distribute the crumbled bacon over the potatoes, followed by the shredded cheese and green onions.
6. Pour the egg mixture over the ingredients in the baking dish.
7. Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown.
8. Let cool for a few minutes before slicing. Garnish with parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
