Ingredients
2 dozen fresh oysters
3 cups whole milk
1 cup heavy cream
4 tbsp unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh thyme, chopped
1/4 cup dry white wine
2 tbsp all-purpose flour
Salt and pepper to taste
1/2 tsp cayenne pepper
Fresh chives for garnish
Instructions
1. Rinse the oysters under cold water and set aside.
2. In a large pot, melt butter over medium heat. Add chopped onions and garlic, sauté until translucent.
3. Stir in flour to form a roux, cooking for 1-2 minutes.
4. Gradually whisk in the milk and cream, ensuring no lumps form.
5. Add the white wine, allowing it to simmer for 2-3 minutes.
6. Add the oysters along with their liquid, thyme, and parsley. Simmer for 5-7 minutes until oysters are cooked through.
7. Season with salt, pepper, and cayenne to taste.
8. Remove from heat and let rest for a few minutes.
9. Serve hot, garnished with fresh chives.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days. Do not freeze as the texture may change.
