Savory Onion Chicken Delight

Ingredients
4 boneless chicken breasts
2 tbsp olive oil
3 large onions, thinly sliced
1 cup beef broth
2 tbsp balsamic vinegar
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1 cup shredded Gruyere cheese
Instructions
1. Preheat your oven to 400°F.
2. In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 15 minutes.
3. Stir in beef broth, balsamic vinegar, thyme, rosemary, salt, and pepper. Simmer for 5 minutes.
4. Place chicken breasts in a baking dish and pour the onion mixture over them.
5. Top with shredded Gruyere cheese.
6. Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through and cheese is bubbly.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

To reheat, place the chicken on a baking dish and warm in a preheated oven at 350°F for about 15 minutes or until heated through.
