Ingredients
2 tbsp olive oil
1 lb mixed mushrooms, sliced
1 small onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder
Salt and pepper to taste
8 small corn tortillas
1/2 cup fresh cilantro, chopped
1 lime, cut into wedges
1/4 cup crumbled feta cheese (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add the diced onion and minced garlic, sauté until translucent.
3. Stir in the sliced mushrooms, smoked paprika, cumin, chili powder, salt, and pepper.
4. Cook until mushrooms are golden brown and fragrant, about 8-10 minutes.
5. Warm tortillas in a separate pan or microwave.
6. Fill each tortilla with the mushroom mixture.
7. Top with fresh cilantro, a squeeze of lime, and crumbled feta cheese if using.
