Savory Mushroom Green Bean Casserole

A delicious twist on the classic green bean casserole with a rich mushroom bechamel and crispy onion topping, perfect for holiday feasts or cozy family dinners.

Ingredients

1 lb fresh green beans, trimmed and halved
1 tbsp olive oil
8 oz cremini mushrooms, sliced
1 small onion, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
1 1/2 cups whole milk
1/2 cup chicken broth
1/2 cup grated parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1 cup crispy fried onions

Instructions

1. Preheat oven to 375°F (190°C).
2. Blanch green beans in boiling water for 3 minutes, then transfer to an ice bath and drain.
3. Heat olive oil in a large skillet over medium heat. Add mushrooms and onion, sauté until softened, about 5 minutes.
4. Add garlic and cook for another minute until fragrant.
5. Stir in flour and cook for 2 minutes, stirring constantly.
6. Gradually whisk in milk and chicken broth, cooking until thickened and smooth, about 5 minutes.
7. Stir in parmesan cheese, salt, pepper, and nutmeg.
8. Combine the sauce with green beans and transfer to a baking dish.
9. Top with crispy fried onions.
10. Bake for 25-30 minutes until bubbly and golden brown on top.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a 350°F oven for 15 minutes or until warmed through.
