Savory Mushroom Goulash

A delightful twist on the classic goulash, this Savory Mushroom Goulash is a hearty vegetarian dish bursting with rich flavors from earthy mushrooms and vibrant vegetables, perfect for a cozy dinner.

Ingredients

2 tbsp olive oil
1 large onion, chopped
2 garlic cloves, minced
1 lb cremini mushrooms, sliced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 tbsp tomato paste
1 tsp paprika
1/2 tsp smoked paprika
1/2 tsp dried thyme
1 can (14.5 oz) fire-roasted tomatoes
1 cup vegetable broth
Salt and pepper to taste
8 oz egg noodles
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat. Add the chopped onions and sauté for about 5 minutes until soft.
2. Stir in the minced garlic and cook for another minute until fragrant.
3. Add the sliced mushrooms and cook for 8-10 minutes until they release their juices and start to brown.
4. Stir in the chopped red and green bell peppers and cook for another 3 minutes.
5. Mix in the tomato paste, paprika, smoked paprika, and thyme. Cook for 2 minutes until well incorporated.
6. Pour in the fire-roasted tomatoes and vegetable broth. Bring to a simmer and let it cook for 15 minutes, allowing the flavors to meld.
7. Season with salt and pepper to taste.
8. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
9. Serve the mushroom goulash over the cooked egg noodles and garnish with fresh parsley.

Storage

Store in airtight containers in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, stirring occasionally. Alternatively, microwave in a microwave-safe dish.
