Savory Mushroom and Spinach Spaghetti Casserole

A delightful twist on a classic casserole, featuring earthy mushrooms and fresh spinach, perfect for a hearty family dinner.

Ingredients

1 lb spaghetti
2 tbsp olive oil
1 cup sliced mushrooms
1 cup fresh spinach
1 cup marinara sauce
1/2 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1 tsp garlic powder
1 tsp dried oregano
Salt and pepper to taste

Instructions

1. Preheat the oven to 375°F.
2. Cook the spaghetti according to package instructions; drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until golden brown, about 5 minutes.
4. Stir in fresh spinach and cook until wilted.
5. Combine cooked spaghetti, sautéed mushrooms and spinach, marinara sauce, ricotta cheese, mozzarella, and Parmesan in a large mixing bowl. Add garlic powder, oregano, salt, and pepper.
6. Transfer the mixture to a greased casserole dish.
7. Bake in the preheated oven for 25 minutes or until the cheese is bubbly and golden brown on top.
8. Let cool for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 1-2 minutes or until heated through. Alternatively, reheat in the oven at 350°F for 10-15 minutes.
