Ingredients

4 lbs whole chicken
2 lemons (halved)
4 tbsp olive oil
1 tbsp salt
1 tsp ground black pepper
5 cloves garlic (minced)
1 tbsp fresh rosemary (chopped)
1 tbsp fresh thyme (chopped)
1 tbsp fresh parsley (chopped)

Instructions

1. Preheat your oven to 375°F (190°C) and prepare a roasting pan.
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. Rub the chicken generously with olive oil, salt, and pepper.
4. Squeeze the juice of one lemon inside the cavity and stuff it with lemon halves, garlic, rosemary, thyme, and parsley.
5. Place the chicken breast side up in the roasting pan and tuck the wing tips underneath the body.
6. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
7. Remove the chicken from the oven and let it rest for 10 minutes before carving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F until warmed through, about 15-20 minutes.
