Savory Leftover Chicken Croquettes

Ingredients
2 cups cooked chicken, shredded
1 cup breadcrumbs
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp paprika
2 large eggs, beaten
1/4 cup milk
1/2 cup vegetable oil for frying
Salt to taste
Instructions
1. In a large bowl, combine shredded chicken, breadcrumbs, flour, Parmesan cheese, parsley, garlic powder, onion powder, black pepper, and paprika.
2. In a separate bowl, whisk together eggs and milk.
3. Gradually add the egg mixture to the chicken mixture, stirring until well combined.
4. Shape the mixture into small patties, about 2 inches in diameter.
5. Heat vegetable oil in a large skillet over medium heat.
6. Fry the croquettes in batches until golden brown on both sides, approximately 3 minutes per side.
7. Transfer to a paper towel-lined plate to drain excess oil.
8. Season with salt to taste before serving.
Storage
Store leftover croquettes in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place croquettes on a baking sheet and warm in a 350°F oven for about 10 minutes or until heated through.
