Savory Herbed Squash Casserole

Ingredients

2 lbs yellow squash, sliced
1 large onion, chopped
3 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 cup grated Parmesan cheese
1 cup breadcrumbs
2 tbsp fresh thyme, chopped
2 tbsp fresh rosemary, chopped
2 tbsp fresh parsley, chopped
2 cloves garlic, minced
2 large eggs, beaten
1/2 cup heavy cream

Instructions

1. Preheat the oven to 350°F (175°C).
2. Heat olive oil in a large skillet over medium heat. Add sliced squash and chopped onion, and sauté until the squash is tender, about 10 minutes.
3. Season the squash mixture with salt and black pepper, then remove from heat.
4. In a large mixing bowl, combine the sautéed squash and onion with Parmesan cheese, breadcrumbs, thyme, rosemary, parsley, garlic, eggs, and heavy cream. Mix well to combine.
5. Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
6. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is set.
7. Let cool for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave at medium power for 1-2 minutes until heated through, or warm in a preheated oven at 300°F (149°C) for 10-15 minutes.
