Savory Herb Turkey Soup

Ingredients

chopped cooked turkey

olive oil
2 tbsp
chopped onion
1 cup
sliced carrots
1 cup
sliced celery
1 cup
minced garlic
3 cloves
chicken broth
8 cups
dried thyme
1 tsp
dried rosemary
1 tsp
bay leaf
1
salt
to taste
black pepper
to taste
egg noodles
2 cups
chopped fresh parsley
1/4 cup

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onions, carrots, and celery; sauté until onions are translucent.
3. Stir in garlic and cook for another minute.
4. Pour in chicken broth and bring to a simmer.
5. Add thyme, rosemary, bay leaf, salt, and pepper.
6. Stir in chopped turkey and egg noodles.
7. Cook until noodles are tender, about 10 minutes.
8. Remove bay leaf and stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stovetop over medium heat until heated through.
