Ingredients
6 bone-in, skin-on chicken thighs
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 cup sliced mushrooms
1 cup sliced onions
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 tbsp all-purpose flour
1 tbsp fresh thyme leaves
1 tbsp chopped fresh parsley
1 tsp dried rosemary
1/2 tsp smoked paprika
Instructions
1. Season chicken thighs with salt and pepper.
2. In a large skillet, heat olive oil over medium heat and brown chicken on both sides. Remove and set aside.
3. In the same skillet, add mushrooms and onions, sauté until softened.
4. Add garlic and cook for an additional minute.
5. Stir in flour, cooking for 2 minutes until it starts to brown.
6. Gradually whisk in chicken broth, followed by the heavy cream, stirring continuously.
7. Add thyme, parsley, rosemary, and smoked paprika, then return the chicken to the skillet.
8. Cover and simmer on low heat for 25-30 minutes, or until chicken is cooked through and sauce has thickened.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over low heat until warmed through, adding a splash of broth if needed to loosen the sauce.
