Ingredients

8 oz elbow macaroni
4 tbsp unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives

Instructions

1. Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.
2. In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until the mixture is golden and bubbly.
3. Slowly whisk in the milk, ensuring no lumps form. Continue to whisk until the mixture thickens, about 3-5 minutes.
4. Reduce the heat to low and stir in the cheddar and Parmesan cheeses until fully melted and smooth.
5. Season the cheese sauce with salt, black pepper, and garlic powder. Add the cooked macaroni and toss to coat.
6. Stir in the fresh basil, parsley, and chives, mixing until well combined.
7. Serve immediately, garnished with additional herbs if desired.

Storage

Store cooled mac and cheese in an airtight container in the refrigerator for up to 3 days.

Reheat in the microwave on medium heat in 1-minute intervals, stirring in between, until warmed through. Alternatively, gently reheat on the stovetop, adding a splash of milk to regain creaminess.
