Ingredients

1 tbsp olive oil
1 lb chicken breast, diced
1 lb shrimp, peeled and deveined
1 andouille sausage, sliced
1 cup diced tomatoes, canned
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp dried thyme
1/2 tsp dried oregano
1 1/2 cups chicken broth
1 cup long-grain rice
1/4 cup fresh parsley, chopped
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chicken and sausage, cooking until browned.
3. Stir in onions, bell pepper, and celery, cooking until softened.
4. Add garlic, smoked paprika, cayenne, thyme, and oregano, stirring for 1 minute.
5. Pour in chicken broth and tomatoes, bringing to a simmer.
6. Stir in rice, cover, and reduce heat to low.
7. Cook for 20 minutes or until rice is tender.
8. Add shrimp and cook until pink and cooked through.
9. Stir in parsley, season with salt and pepper, serve hot.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until thoroughly warmed, or microwave on high for 2-3 minutes.
