Savory Herb Infused Meatball Soup
A delightful twist on the classic, this savory herb-infused meatball soup combines tender beef and turkey meatballs with fresh vegetables and aromatic herbs. Perfect for a comforting meal with family or friends.

Ingredients
1 lb ground beef
1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 large egg
1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
6 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup baby spinach
1 tbsp fresh basil, chopped
Instructions
1. In a large bowl, combine ground beef, ground turkey, breadcrumbs, Parmesan cheese, parsley, oregano, salt, pepper, and egg. Mix until well combined.
2. Shape mixture into 1-inch meatballs.
3. In a large pot, heat olive oil over medium heat. Add meatballs in batches and cook until browned on all sides. Remove and set aside.
4. In the same pot, add diced onion, minced garlic, sliced carrots, and sliced celery. Cook until vegetables are softened.
5. Pour in chicken broth and diced tomatoes. Bring to a simmer.
6. Return meatballs to the pot and simmer for 15-20 minutes until meatballs are cooked through.
7. Stir in baby spinach and fresh basil, cooking until spinach is wilted.
8. Serve hot, garnished with additional Parmesan cheese if desired.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat until warmed through or in the microwave for 2-3 minutes.
