Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 tbsp baking powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp fresh chopped chives
1 tbsp fresh chopped parsley
1 tbsp fresh chopped dill
1 large egg
3/4 cup buttermilk
1 cup corn kernels
Oil for frying
Instructions
1. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, black pepper, garlic powder, and onion powder.
2. Stir in the chopped chives, parsley, and dill until evenly distributed.
3. In a separate bowl, beat the egg and mix it with buttermilk.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Fold in the corn kernels gently.
6. Heat oil in a deep fryer or a large pot to 350°F (175°C).
7. Drop spoonfuls of batter into the hot oil, frying in batches for 2-3 minutes or until golden brown.
8. Drain on paper towels and serve warm.
