Ingredients
1 lb cooked ham, diced
2 cups dried cannellini beans, soaked overnight
1 medium onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1/4 cup fresh parsley, chopped
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
8 cups chicken broth
Salt and pepper to taste
2 tbsp olive oil
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and garlic, sauté until translucent.
3. Stir in carrots and celery, cook for an additional 5 minutes.
4. Add the diced ham and cook until slightly browned.
5. Pour in chicken broth and add soaked cannellini beans.
6. Stir in thyme, rosemary, bay leaf, salt, and pepper.
7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until beans are tender.
8. Add fresh parsley, stir, and adjust seasoning if necessary.
9. Remove bay leaf before serving.
Storage
Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
