Savory Herb-Crusted Fish Bake

Ingredients
1.5 lbs cod fillets
1 cup panko breadcrumbs
2 tbsp olive oil
1 tbsp lemon zest
2 tsp dried thyme
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 cups cherry tomatoes
1 cup sliced zucchini
1/2 cup red onion, sliced
2 tbsp fresh parsley, chopped
Instructions
1. Preheat the oven to 400°F.
2. Arrange cod fillets in a baking dish.
3. In a bowl, mix panko breadcrumbs, olive oil, lemon zest, thyme, garlic powder, salt, and pepper to create the crust mixture.
4. Press the mixture onto the fish fillets to create an even crust.
5. Toss cherry tomatoes, zucchini, and red onion with olive oil, salt, and pepper, then place around the fish in the baking dish.
6. Bake for 20-25 minutes until the fish is cooked through and the crust is golden brown.
7. Garnish with fresh parsley before serving.

Reheating
Reheat in a preheated oven at 350°F for 10 minutes or until heated through.
