Ingredients
2 lbs ground beef
1 cup breadcrumbs
2 large eggs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/4 cup ketchup
1/4 cup water
Instructions
1. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, parsley, Worcestershire sauce, thyme, salt, and black pepper. Mix until just combined.
2. Shape the mixture into a loaf and place it in the crockpot.
3. In a small bowl, mix ketchup and water, then spread the mixture evenly over the meatloaf.
4. Cover and cook on low for 6-7 hours or until the internal temperature reaches 160°F.
5. Carefully remove the meatloaf from the crockpot and let it rest for 10 minutes before slicing.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual slices in the microwave for 1-2 minutes or in a preheated oven at 350°F for 10-15 minutes.
