Savory Herb Crepes with Ricotta & Spinach

Ingredients
1 cup all-purpose flour
2 large eggs
1 cup whole milk
1/4 cup water
2 tbsp melted butter
1/4 tsp salt
1 tbsp chopped fresh chives
1 tbsp chopped fresh parsley
1 tbsp olive oil
2 cups fresh spinach
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. In a large bowl, whisk together the flour, eggs, milk, water, melted butter, and salt until smooth.
2. Stir in the chopped chives and parsley.
3. Heat a lightly oiled non-stick skillet over medium heat.
4. Pour 1/4 cup of batter onto the skillet, tilting the pan to spread the batter evenly.
5. Cook for about 1-2 minutes until the edges start to lift and the bottom is light golden brown, then flip and cook for another 1 minute. Repeat with the remaining batter.
6. In another skillet, heat olive oil over medium heat and sauté the spinach until wilted.
7. In a bowl, mix the ricotta cheese, sautéed spinach, Parmesan, salt, and pepper.
8. Place a spoonful of the ricotta mixture in the center of each crepe and fold.
9. Serve warm garnished with additional herbs.
Storage
Store leftover crepes in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the crepes in a skillet over medium heat until warmed through, or microwave for 30-45 seconds.
