Savory Herb Chicken Mushroom Soup

Ingredients
1 lb chicken breast, diced
8 oz button mushrooms, sliced
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onions and garlic, sauté until fragrant.
3. Add chicken, cook until lightly browned.
4. Stir in mushrooms, cook for 5 minutes.
5. Pour in chicken broth, bring to a simmer.
6. Add thyme and rosemary, season with salt and pepper.
7. Simmer for 20 minutes.
8. Stir in heavy cream, heat through but do not boil.
9. Garnish with fresh parsley before serving.
