Ingredients
4 chicken breasts, boneless and skinless
1/4 cup olive oil
2 tbsp fresh thyme, chopped
2 tbsp fresh rosemary, chopped
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 lemon, juiced
1/4 cup chicken broth
1/4 cup heavy cream
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a small bowl, combine olive oil, thyme, rosemary, garlic, salt, and pepper.
3. Rub the mixture over the chicken breasts.
4. In a large oven-safe skillet, heat over medium-high heat and sear the chicken on both sides until golden brown, about 3-4 minutes per side.
5. Add lemon juice and chicken broth to the skillet, then transfer to the oven.
6. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
7. Remove chicken from the skillet and let rest.
8. Place the skillet back on the stove over medium heat, add heavy cream, and stir to combine, scraping any bits from the bottom of the pan.
9. Simmer the sauce for 3-4 minutes until slightly thickened.
10. Serve chicken with sauce drizzled over the top.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through or microwave on medium power in 30-second intervals.
