Ingredients

1 lb fresh green beans, trimmed
2 tbsp unsalted butter
1 medium onion, thinly sliced
2 cloves garlic, minced
8 oz mushrooms, sliced
2 tbsp all-purpose flour
1 cup milk
1/2 cup chicken or vegetable broth
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil

Instructions

1. Preheat oven to 350°F.
2. In a large pot, bring water to a boil, add green beans, and boil for 4 minutes. Drain and set aside.
3. In a skillet over medium heat, melt butter, then add onions and garlic, sauté until onions are translucent.
4. Add mushrooms and cook until soft, about 5 minutes.
5. Stir in flour, cooking for 1 minute, before gradually whisking in milk and broth, simmer until thickened.
6. Season the mixture with salt and pepper, then remove from heat.
7. In a bowl, mix Parmesan cheese and panko breadcrumbs with olive oil.
8. Combine green beans with the mushroom mixture in a baking dish.
9. Top with the garlic-parmesan mixture evenly.
10. Bake in preheated oven for 25 minutes until golden brown on top.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a 350°F oven for 10-15 minutes until heated through.
