Ingredients
1 medium head red cabbage, thinly sliced
2 tablespoons olive oil
2 medium apples, peeled and grated
1 medium onion, finely chopped
3 tablespoons apple cider vinegar
2 tablespoons brown sugar
1 teaspoon caraway seeds
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup water
2 tablespoons fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté until translucent.
3. Stir in the grated apples and cook for 2 minutes.
4. Add the sliced cabbage and continue to cook, stirring occasionally, for 5 minutes.
5. Pour in the apple cider vinegar and water.
6. Sprinkle with brown sugar, caraway seeds, cinnamon, salt, and pepper.
7. Stir well, cover, and reduce heat to low.
8. Simmer for 45 minutes, stirring occasionally, until the cabbage is tender and flavors meld together.
9. Garnish with fresh parsley before serving.
