Ingredients
1 lb ground beef
2 cups elbow macaroni
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced
1 red bell pepper, diced
2 cups beef broth
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1/2 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the onions and sauté until translucent.
2. Add the garlic and cook for another 1 minute until fragrant.
3. Increase the heat to medium-high, add the ground beef, and brown it while breaking it up with a spatula.
4. Stir in the mushrooms and bell pepper, cooking until softened, about 5 minutes.
5. Add the beef broth, bring to a simmer, then add the macaroni and cover. Cook for about 10 minutes, stirring occasionally, until pasta is tender.
6. Stir in the heavy cream, salt, pepper, and thyme. Let simmer for another 5 minutes or until the sauce thickens to your liking.
7. Remove from heat and stir in Parmesan cheese until melted and combined. Garnish with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat, stirring occasionally, until warmed through. Add a splash of water or broth if needed to loosen the sauce.
