Ingredients

1 ham bone with some meat
8 cups water
2 cups diced carrots
2 cups diced potatoes
1 cup chopped celery
1 diced onion
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
2 tbsp olive oil
2 tbsp apple cider vinegar
1 tsp salt
1 tsp black pepper
1 tsp thyme
1 tsp rosemary
1 bay leaf
1 cup frozen peas
1 tbsp chopped parsley

Instructions

1. In a large stockpot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
2. Add the ham bone, water, diced tomatoes, apple cider vinegar, salt, pepper, thyme, rosemary, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 1 hour.
3. Remove the ham bone, let it cool slightly, then remove any remaining meat from the bone and return meat to the pot.
4. Add carrots, potatoes, celery, and cook for another 30 minutes until vegetables are tender.
5. Stir in frozen peas and parsley, cooking for an additional 5 minutes.
6. Adjust seasoning to taste before serving.

Storage

Allow soup to cool completely and store in airtight containers in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheating

Reheat gently on the stove over medium heat until warmed through, or microwave in 1-minute intervals, stirring in between.
