Savory Corned Beef and Cabbage Stew

Ingredients

2 lbs corned beef brisket
1 large head of cabbage, chopped
4 large carrots, sliced
6 medium potatoes, diced
1 large onion, chopped
4 cloves garlic, minced
4 cups beef broth
1 tbsp olive oil
2 bay leaves
1 tsp black pepper
1 tbsp Worcestershire sauce

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until golden brown.
3. Place corned beef brisket in the pot and sear on all sides.
4. Add beef broth, bay leaves, and black pepper.
5. Bring to a boil, then reduce heat and simmer for 2 hours.
6. Add cabbage, carrots, and potatoes to the pot.
7. Stir in Worcestershire sauce and continue to cook for another hour or until vegetables are tender.
8. Remove bay leaves and serve hot.

Storage

Refrigerate leftovers in an airtight container for up to 3 days.

Reheating
