Ingredients
1 can (15 oz) whole kernel corn
1 can (15 oz) creamed corn
1 cup sour cream
1/2 cup melted butter
2 large eggs
1 cup shredded cheddar cheese
1 box (8.5 oz) corn muffin mix
1/4 cup chopped green onions
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large mixing bowl, combine the whole kernel corn, creamed corn, sour cream, melted butter, and eggs. Mix well to combine.
3. Stir in the shredded cheddar cheese, corn muffin mix, green onions, salt, and black pepper until well combined.
4. Pour the mixture into a greased 9x13 inch baking dish and spread evenly.
5. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
6. Let it cool for 10 minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 300°F (150°C) for 15-20 minutes until heated through.
