Ingredients
1 lb shrimp, peeled and deveined
1/4 cup unsalted butter
1/4 cup all-purpose flour
1/2 cup diced onions
1/2 cup diced celery
1/2 cup diced green bell pepper
2 cloves garlic, minced
1 cup chicken broth
1/2 cup freshly squeezed orange juice
1 tbsp tomato paste
1 tsp Worcestershire sauce
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp chopped fresh parsley
Cooked white rice for serving
Instructions
1. In a large pot, melt butter over medium heat. Add flour and cook, stirring constantly, until it turns a golden brown, about 5 minutes.
2. Stir in onions, celery, and green bell pepper; cook until vegetables are tender, about 5 minutes.
3. Add garlic and cook for an additional minute.
4. Slowly whisk in chicken broth, orange juice, tomato paste, Worcestershire sauce, cayenne pepper, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
5. Add shrimp and cook until they are pink and opaque, about 5 minutes.
6. Stir in parsley and remove from heat. Serve over cooked rice.
Storage
Store leftover etouffee in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat, stirring occasionally, until warmed through.
