Ingredients
4 cups cooked chicken, shredded
2 cups chicken broth
1 cup heavy cream
1/2 cup all-purpose flour
1/2 cup unsalted butter
1 cup frozen peas
1 cup sliced carrots
1 small onion, diced
Salt and pepper to taste
2 cups all-purpose flour for biscuits
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup milk
Instructions
1. Preheat oven to 400°F.
2. In a large skillet, melt 1/2 cup butter over medium heat. Add onion, carrots, and peas; cook until vegetables are tender.
3. Stir in 1/2 cup flour; cook for 1-2 minutes.
4. Gradually add chicken broth and cream, stirring constantly until thickened.
5. Add shredded chicken, salt, and pepper; mix well.
6. For biscuits, combine 2 cups flour, baking powder, and salt in a bowl.
7. Cut in cold butter until mixture resembles coarse crumbs.
8. Stir in milk until dough forms.
9. Roll out dough to 1/2-inch thickness and cut into rounds.
10. Pour chicken mixture into a baking dish, place biscuits on top.
11. Bake for 15-20 minutes until biscuits are golden brown.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F and bake until heated through, about 15 minutes.
