Savory Chicken Cacciatore with Olives and Artichokes

Ingredients

1 whole chicken (about 3 lbs), cut into pieces
2 tbsp olive oil
1 large onion, sliced
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup pitted green olives, halved
1 can (14 oz) artichoke hearts, drained and quartered
2 cups crushed tomatoes
1/2 cup white wine
1 tsp dried oregano
1/2 tsp black pepper
Salt to taste
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and brown on all sides. Remove and set aside.
2. In the same skillet, add onion and garlic; sauté until soft.
3. Stir in bell peppers, olives, and artichokes. Cook for 3 minutes.
4. Pour in crushed tomatoes and white wine. Add oregano, black pepper, and salt to taste.
5. Return chicken to the skillet. Cover and simmer on low heat for 45 minutes until chicken is cooked through.
6. Stir in fresh basil and parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat until warmed through, adding a splash of water if needed to prevent sticking.
