Savory Cabbage-Tomato Medley is a delightful twist on classic cabbage soup, offering a rich tomato base enhanced with aromatic herbs and tender vegetables, perfect for a cozy meal.

Ingredients
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 medium green bell pepper, diced
1 large carrot, sliced
1 small head of cabbage, shredded
1 can (28 oz) crushed tomatoes
4 cups vegetable broth
1 tbsp apple cider vinegar
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
3. Stir in the green bell pepper and carrot, cooking for another 3-4 minutes.
4. Add the shredded cabbage and continue to cook for 5 minutes, stirring occasionally.
5. Pour in the crushed tomatoes and vegetable broth, then add apple cider vinegar, oregano, thyme, salt, and pepper.
6. Bring the mixture to a boil, then reduce heat to low and simmer for 30-40 minutes until cabbage is tender.
7. Stir in fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
Reheat on the stovetop over medium heat until hot or microwave in a microwave-safe dish in 1-minute increments, stirring in between.
