Ingredients
2 lbs beef tenderloin
2 tbsp olive oil
1 tbsp kosher salt
1 tsp black pepper
3 cloves garlic, minced
2 sprigs fresh rosemary
2 sprigs fresh thyme
Instructions
1. Preheat your oven to 425°F.
2. Rub the beef tenderloin with olive oil, salt, and black pepper.
3. Spread minced garlic over the beef, and place rosemary and thyme sprigs on top.
4. Place the beef on a roasting rack in a shallow pan.
5. Roast for 25-30 minutes or until an internal temperature of 135°F for medium-rare.
6. Remove the beef from the oven and let it rest for 15 minutes before slicing.
Storage
Wrap the cooled beef tenderloin tightly in aluminum foil and store in the refrigerator for up to 3 days.
Reheating
Preheat the oven to 300°F and reheat the tenderloin wrapped in foil for about 15-20 minutes.
