Savory Beef Stew
This hearty beef stew features succulent beef chunks, tender potatoes, sweet carrots, and peas in a rich, flavorful gravy made convenient with the Instant Pot. It's perfect for a cozy family dinner any night of the week.

Ingredients
2 lbs beef chuck, cubed
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 tbsp tomato paste
2 tsp Worcestershire sauce
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
4 medium potatoes, peeled and cubed
3 large carrots, sliced
1 cup frozen peas
2 tbsp all-purpose flour
2 tbsp water
Instructions
1. Set the Instant Pot to Sauté mode and heat olive oil.
2. Add the beef cubes and brown on all sides. Remove and set aside.
3. In the same pot, add onion and garlic; sauté until soft.
4. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, salt, and black pepper.
5. Return beef to the pot, add potatoes and carrots, then close the lid and set to Pressure Cook on high for 35 minutes.
6. Once cooked, quick release the pressure.
7. Mix flour and water in a small bowl; stir into the stew to thicken.
8. Add peas and set to Sauté mode for 5 minutes until peas are heated through.
Storage
Store the stew in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the stew in a saucepan over medium heat until warmed through, stirring occasionally.
