Savory Beef Barley Soup with Root Vegetables

Ingredients
1 lb beef stew meat
8 cups beef broth
1 cup pearl barley
2 carrots, diced
2 celery stalks, diced
1 large onion, chopped
2 cloves garlic, minced
1 parsnip, diced
2 potatoes, diced
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 bay leaves
1 tsp thyme
1 tbsp Worcestershire sauce
1 tsp parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Remove the beef from the pot and set aside.
4. In the same pot, add onion, garlic, carrots, celery, parsnip, and potatoes. Cook until the vegetables start to soften.
5. Return the beef to the pot.
6. Stir in beef broth, barley, bay leaves, thyme, Worcestershire sauce, salt, and pepper.
7. Bring to a boil, then reduce heat to low and simmer for 1 hour or until barley and beef are tender.
8. Remove bay leaves and stir in chopped parsley before serving.
Storage
Store the soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup on the stovetop over medium heat until steaming hot, stirring occasionally.
