Savory Autumn Turkey Casserole

Ingredients

2 lbs cooked turkey breast, cubed
1 cup chopped onions
1 cup chopped celery
1 cup sliced mushrooms
2 cloves garlic, minced
3 cups cooked wild rice
1 cup dried cranberries
1 cup chopped pecans
2 cups turkey or chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp olive oil

Instructions

1. Preheat oven to 350°F (175°C).
2. Heat olive oil in a large skillet over medium heat. Add onions, celery, and mushrooms; sauté until softened, about 5 minutes.
3. Add garlic and cook for an additional minute.
4. In a large mixing bowl, combine cooked turkey, wild rice, cranberries, and pecans.
5. Add sautéed vegetables, broth, heavy cream, Parmesan cheese, thyme, and rosemary to the turkey mixture; stir to combine.
6. Season with salt and pepper to taste.
7. Pour the mixture into a greased 9x13-inch casserole dish.
8. Bake in the preheated oven for 30-35 minutes or until the top is golden and crisp.
9. Let cool for a few minutes before serving.

Storage

Refrigerate in an airtight container for up to 3 days.

Reheating

Preheat oven to 325°F (160°C) and reheat for 15-20 minutes or until heated through.
