Savory Apple Dijon Crock Pot Pork Chops

Ingredients

4 bone-in pork chops, approximately 1-inch thick
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, sliced
2 cloves garlic, minced
2 cups unsweetened apple juice
1/4 cup Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Instructions

1. Season pork chops with salt and pepper. Heat olive oil in a large skillet over medium-high heat and brown pork chops on both sides. Transfer to a crock pot.
2. In the same skillet, add sliced onions and garlic, sautéing until onions are translucent. Add to the crock pot.
3. In a medium bowl, whisk together apple juice, Dijon mustard, apple cider vinegar, soy sauce, brown sugar, thyme, cinnamon, and nutmeg. Pour over pork chops and onions in the crock pot.
4. Cover and cook on low for 6-7 hours or until pork chops are tender.
5. Serve pork chops with sauce over mashed potatoes or rice.

Storage

Store leftover pork chops and sauce in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish, covered, on medium power for 2-3 minutes or until heated through, or reheat gently on the stovetop over medium heat.
