Ingredients
4 boneless pork chops, each about 1 inch thick
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
2 tablespoons olive oil
1/2 cup apple butter
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon unsalted butter
1 apple, thinly sliced
Instructions
1. Pat the pork chops dry with paper towels, then season both sides with salt, pepper, and smoked paprika.
2. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, until golden brown and cooked through. Remove pork chops from the skillet and set aside.
3. In the same skillet, reduce heat to medium and add apple butter, apple cider vinegar, Dijon mustard, thyme, garlic powder, and onion powder. Stir and cook for 2-3 minutes until the sauce thickens slightly.
4. Return the pork chops to the skillet, turning to coat them well with the sauce. Cook for an additional 2 minutes.
5. Add the sliced apples to the skillet and cook for another 3 minutes, until the apples are slightly softened and caramelized. Remove from heat and serve immediately with the sauce and apples.
Storage
Store leftover pork chops in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the pork chops in a skillet over medium heat with a splash of water or broth to prevent drying out, and cook until heated through.
