Ingredients
1 lb fresh green beans, trimmed and halved
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup sliced mushrooms
3/4 cup almond milk
1/2 cup chicken broth
1/4 cup all-purpose flour
1/4 cup sliced almonds
1/4 cup breadcrumbs
1 tablespoon soy sauce
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large pot of boiling salted water, blanch green beans for 3-4 minutes, then drain and set aside.
3. In a large skillet over medium heat, add olive oil and sauté onions and garlic until translucent.
4. Add mushrooms to the skillet and cook until softened.
5. Stir in flour and cook for 1 minute, then slowly whisk in almond milk and chicken broth until smooth.
6. Add soy sauce, salt, and pepper, and bring mixture to a simmer, stirring frequently until thickened.
7. Combine green beans with the almond sauce and mix well.
8. Transfer mixture to a greased baking dish.
9. In a small bowl, mix breadcrumbs and sliced almonds, then sprinkle over the casserole.
10. Bake in preheated oven for 20-25 minutes, until the top is golden brown and bubbly.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until heated through.
