Saffron Garlic Mussels

Ingredients

2 lbs fresh mussels
2 tbsp olive oil
4 cloves garlic, minced
1/2 tsp saffron threads
1 cup dry white wine
1/2 cup vegetable broth
1/4 cup fresh parsley, chopped
Salt and pepper to taste
1 lemon, cut into wedges

Instructions

1. Clean and debeard the mussels under cold water, discarding any with broken shells.
2. In a large pot, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
3. Add saffron threads and stir for 1 minute to release their flavor.
4. Pour in the white wine and vegetable broth, bringing the mixture to a simmer.
5. Add the mussels to the pot, cover, and cook for 5-7 minutes or until the mussels have opened, discarding any that remain closed.
6. Stir in chopped parsley and season with salt and pepper to taste.
7. Serve hot with lemon wedges on the side.

Storage

Mussels should be consumed immediately; however, you can store cooked mussels in an airtight container in the fridge for up to 2 days.

Reheating

Reheat mussels gently in a covered pot over low heat until warmed through, adding a splash of water or broth to prevent drying out.
